Ice Machine Hygiene
Why ice is treated as a food product and what that means operationally.
Ice is food
Ice is consumed and contacts food directly, so bins, scoops, curtains and chutes are food-contact surfaces subject to the same standards as prep equipment.
Where problems start
Bins are cool, dark and wet — ideal for yeast, mould and bacterial films. Scoops left inside bins and food stored in bins are the two most common hygiene failures we see.
What good practice looks like
Weekly bin sanitising with an approved product, scoops stored in a dedicated holder outside the bin, bins emptied and dried during quiet periods, and professional internal cleaning on schedule.
Documentation
Keep dated records of sanitising and professional cleaning. This protects you during inspections and internal audits.
